Zucchini Pasta

I found this on allrecipes.com
Of course I made a few changes but the result was amazing!
I served it with a meaty spaghetti sauce.

Zucchini – a 10″x3″ zucchini made 2 servings.
olive oil
1/2 cup thinly sliced onion
1 clove garlic
salt & pepper
parmesan cheese (optional)

Use different colors of zucchini if possible.
Wash and cut the zucchini.
Cut the unpeeled zucchini into 4″ chunks.
Use a mandolin to cut them into thick ribbons (resembling French fries) or use a sharp knife.
Toss with a bit of salt to draw out the moisture and let the zucchini sit in a colander for up to 30 minutes.
Heat 2 T. oil in a sauté pan.
Saute the onions and garlic just until the onions are soft.
Add the zucchini. Cook for 5 minutes, stirring occasionally until zucchini begins to soften.

To serve – top with sauce and parmesan or shredded cheese.
