4 cups rhubarb, chopped
4 cups mini marshmallows
1 small package strawberry jello
1 white cake mix, prepared or use a homemade recipe
Prepare a 9×13″ pan.
Preheat oven to 350.
Evenly scatter rhubarb over the bottom of the pan.
Cover with a layer of marshmallows.
Sprinkle jello over marshmallows.
Pour cake batter evenly over top.
Bake at 350 for 25 minutes or until top is browned and cake tester comes out clean (be careful not to push the cake tester into the marshmallow layer or it will come out looking underbaked).
Serve upside-down and warmed, topped with ice cream or whipped cream.
