Lime Glazed Coconut Cookies

I found this one in Canadian Living:—Food—Canadian-Living/Detail.aspx

but here it is simplified!


1 cup unsalted butter,
2/3 cup granulated sugar
1 egg
1 tsp vanilla
1 tsp coconut flavoring
2-1/4 cups all-purpose Gluten Free flour OR your blend,
eg. [1/2 cup each: brown rice flour, sweet rice flour, coconut flour, cornstarch PLUS 1/4 c. additional cornstarch]
(I added 1/2 c. more brown rice flour to make the dough easier to handle)
1/2 cup sweetened coconut
2 tsp grated lime rind
1 tsp baking soda
1/2 tsp xanthum gum
1/4 tsp salt

Lime Glaze:
1 1/2 cups icing sugar
2 tsp grated lime rind
1/4 cup lime juice

In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
Whisk together flour, coconut, cornstarch, lime rind, baking soda and salt; stir into butter mixture in 2 additions.
Divide in half; roll into two 12″ logs. Wrap each and freeze for a few hours or overnight.
It takes about 30 minutes to soften enough to slice.
Cut in 1/4″ slices, place, 1 inch apart, on greased or sprayed baking sheets. Bake in 350°F (180°C) oven until firm and edges are golden, 10 to 12 minutes. Transfer to racks; let cool.

Lime Glaze:
In small bowl, whisk together icing sugar, lime rind and lime juice. Dip cookies into glaze and let harden.
