New & Improved Chocolate Chip Cookies (07/14)

1 c. margarine, softened
2/3 c. brown sugar
2/3 c. white sugar
2 eggs
2 ts. GF vanilla
2 c. GF flour
<em 1 1/4 c. br. rice flour, 1/4 c. amaranth flour, 1/4 c. oat flour, 1/4 c. cornstarch]
1/2 ts. GF baking powder
1 ts. GF baking soda
1 ts. xanthum gum
½ ts. salt
3/4 c. chocolate chips
1/2 c. choppped pecans

Mix in order given. Add up to 1/4 c. brown rice flour if dough is too soft. I suggest baking a test cookie!
Bake (smaller than you think with generous spacing between) as drop cookies @ 375 for 8-10 min.
