Brenda’s Best GF Bread

Check out the  GF Flours  page under the Tips menu for some ideas about custom flour blends 

■3 eggs
■4 tablespoons melted butter or oil
■1 teaspoon vinegar
■2 cups milk

■4 teaspoons instant dry yeast
5 cups Bread Flour Mix or:
-2 cups brown rice flour
-1/2 c. amaranth flour
-½ c. millet flour
-2 c. cornstarch

■¼ cup sugar
4 teaspoons instant yeast
■4 teaspoons xanthum gum
■1½ teaspoons salt

1.Using whisk attachment beat eggs, melted butter and vinegar together at high speed until foamy.
3.Meanwhile warm milk
3.Combine all dry ingredients and set aside.
4.Add milk mixture to egg mixture and beat until foamy again.
5.Change to flat beater (suitable for thick batter).
6.Turn mixer to low and gradually beat in flour mixture.
7.Beat on high for 3 min.
8.Spoon into two well greased small (7×3”) or 1 regular (8×4”) well greased bread pans.
9.Smooth tops with a moistened spatula or fingers.
10.Sprinkle with sesame seeds if desired.
11.Make two diagonal 1/4″ deep slashes across the loave to keep the crust from separating.
12.Let rise in warm place until nearly doubled (20 minutes).
13.Don’t let it rise above the top of the pan!
14.Bake @ 350 for 25-35 minutes.
15.Let cool for 15 minutes and remove from pan to rest on a rack until cooled completely.
16.Slice and freeze.
