Waffles with Custard Sauce

2 1/4 cups gluten-free flour blend
(I prefer 2 c. AP flour and 1/4 c. corn flour)
2 Tablespoons sugar
4 teaspoons baking powder
3/4 teaspoon xanthum or guar gum
1/2 teaspoon salt
2 eggs, slightly beaten
2 cups milk
1/4 cup butter, melted

Custard Sauce:
1/4 cup sugar
2-3 Tablespoons cornstarch
2 eggs, slightly beaten
2 cups milk
1 teaspoon butter
1/2 teaspoon vanilla

Mix dry waffle ingredients together. Set aside.

While the custard is cooking add wet waffle ingredients to dry. Mix until just combined. Let stand for 10 minutes to thicken slightly.

Custard Sauce:
Combine sugar and cornstarch. Warm the milk. Slowly beat in the eggs. Add the egg mixture to the cornstarch mixture and stir until smooth. Heat, on high, in the microwave for 2 minutes. Stir. Continue cooking, stirring every 30 seconds, until custard has thickened. Add vanilla and butter, stirring to mix well.

Bake waffles until golden.
Top with custard and other toppings of your choice. Try various fruits and syrups, whipped cream for decadent brunches!
